  • 1/2 cup tapioca pearls (optional, for added texture)
  • Ice cubes (for serving)
  • Pinch of salt

Instructions

  1. Wash the purple sweet potatoes thoroughly under running water to remove any dirt or impurities.
  2. Peel the sweet potatoes using a vegetable peeler, ensuring to remove only the skin.
  3. Dice the sweet potatoes into small, even cubes, about 1-inch in size.
  4. In a medium-sized pot, bring 2 cups of water to a boil over high heat. Add the diced sweet potatoes once boiling.
  5. Reduce the heat to medium and cook for about 15-20 minutes, or until fork-tender.
  6. Drain the sweet potatoes and let them cool for a few minutes.
  7. Transfer the cooked sweet potatoes to a mixing bowl and mash until smooth and creamy.

  9. Set the mashed sweet potatoes aside to cool completely.
