Refreshing Raspberry Lime Fizz mocktail with homemade raspberry syrup, fresh lime, and sparkling water. Perfect for any occasion!

- 1 cup fresh raspberries, plus extra for garnish
- 1/2 cup granulated sugar
- 1/2 cup water
- 1/2 cup fresh lime juice (about 4–5 limes)
- 4 cups chilled sparkling water or club soda
- Lime wedges, for garnish
- Fresh mint sprigs, for garnish (optional)
- Ice cubes
Instructions
- In a medium saucepan, combine raspberries, sugar, and water.
- Bring to a gentle simmer over medium heat, stirring occasionally until sugar dissolves.
- Mash the raspberries with a fork or potato masher.
- Continue to simmer for 5-7 minutes, stirring occasionally, until the syrup thickens slightly.
- Remove from heat and strain through a fine-mesh sieve into a heatproof bowl, pressing on solids to extract juice. Discard seeds and pulp.
- Cool completely before using. Store in an airtight container in the refrigerator for up to a week.
- Choose ripe limes that are firm and heavy.
- Roll the limes firmly on the countertop.
- Cut the limes in half and juice them using a citrus juicer. Aim for about 1/2 cup of juice.
- Strain the juice through a fine-mesh sieve (optional).
- Fill each glass with ice cubes.
- Add 2-3 tablespoons of raspberry syrup to each glass (adjust to taste).
- Add 2-3 tablespoons of fresh lime juice to each glass (adjust to taste).
- Top with chilled sparkling water or club soda, leaving about an inch of space at the top.
- Stir gently.
- Garnish with fresh raspberries, a lime wedge, and fresh mint sprigs (optional).
- Serve immediately.
Notes
- Sweetness: Adjust the amount of sugar in the raspberry syrup or the amount of syrup in the mocktail to your preference.
- Spicy Kick: Add a thin slice of jalapeño to the raspberry syrup while simmering for a little heat. Remove before straining.
- Berry Variations: Use other berries like strawberries, blueberries, or blackberries for a different flavor.
- Cocktail Version: Add a shot of vodka, gin, or tequila to each glass before topping with sparkling water.
- Frozen Version: Blend all ingredients with ice for a frozen Raspberry Lime Fizz.
- Popsicles: Pour the mixture into popsicle molds and freeze for a refreshing summer treat.
- Make Ahead: The raspberry syrup can be made ahead of time and stored in the refrigerator for up to a week. You can also juice the limes ahead of time and store the juice in the refrigerator for up to 24 hours.
