  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ricotta cheese
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized.
  4. Meanwhile, spread ricotta on a plate.
  5. Top with roasted carrots.
  6. Drizzle with honey and sprinkle with chopped pistachios.

Notes

  • The carrots can be roasted a day ahead. Let cool completely, then cover and refrigerate.
