Instructions
- Cut the salmon fillet into small chunks, aiming for about 1-inch pieces.
- Place the salmon chunks into a food processor and pulse until finely chopped but not pureed.
- Transfer the chopped salmon into a large mixing bowl.
- In the bowl with the salmon, add breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, salt, black pepper, and smoked paprika (if using).
- In a separate bowl, whisk together the egg, Dijon mustard, and lemon juice.
- Pour the egg mixture into the salmon bowl and gently mix until just combined.
- Shape the mixture into 1-inch balls or patties using a small cookie scoop or your hands.
- Place the formed salmon bites on a parchment-lined baking sheet or plate. Refrigerate for about 30 minutes if desired.
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
- Once hot, add the salmon bites in batches, cooking 3-4 minutes on each side until golden brown.
- Transfer cooked bites to a paper towel-lined plate to drain excess oil.
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper and lightly brush with olive oil.
- Place the salmon bites on the sheet, spaced evenly, and brush the tops with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.
- Serve the salmon bites with lemon wedges and a dipping sauce, such as tartar sauce or a zesty yogurt sauce.
