  • 1 pound of Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain and rinse the pasta under cold water.
  2. In a large skillet, heat olive oil over medium heat. Remove the casing from the Italian sausage and crumble it into the skillet. Cook for 5-7 minutes until browned and cooked through. Transfer the sausage to a plate, leaving the drippings in the skillet.
  3. In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional 1-2 minutes.
  4. Add the diced tomatoes (with juices), chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a simmer. Return the cooked sausage to the skillet and stir to combine.
  5. Stir in the heavy cream and mix well. Gradually add the cooked pasta, tossing everything together. If the mixture is too thick, add reserved pasta water until desired consistency is reached.
  6. Stir in grated Parmesan cheese until melted. Season with salt and pepper to taste. Garnish with chopped basil or parsley if desired.
  7. Serve hot from the skillet, paired with a side salad or garlic bread. Store leftovers in an airtight container in the fridge for up to 3 days.
