Instructions
- Rinse the shrimp under cold water and pat them dry with a paper towel.
- In a medium bowl, season the shrimp with salt, pepper, smoked paprika, and red pepper flakes. Toss gently to coat.
- Set the seasoned shrimp aside to allow the flavors to meld.
- Mince the garlic cloves finely.
- Zest the lemon and then juice it, removing any seeds.
- Chop the fresh parsley and halve the cherry tomatoes.
- Heat a large skillet over medium-high heat and add the olive oil.
- Sauté the minced garlic in the skillet for about 30 seconds, stirring constantly.
- Add the seasoned shrimp to the skillet in a single layer, avoiding overcrowding.
- Cook the shrimp for 2-3 minutes on one side until pink and opaque, then flip them over.
- Add the halved cherry tomatoes and white wine (if using) to the skillet.
- Squeeze the lemon juice over the shrimp and tomatoes, and sprinkle in the lemon zest. Stir gently.
- Cook for another 2-3 minutes until the shrimp are fully cooked and the tomatoes are tender.
- Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
- Remove the skillet from heat and stir in the chopped parsley.
- Prepare rice or pasta according to package instructions.
- Serve the sautéed shrimp over rice or pasta, spooning the pan sauce over the top.
- Garnish with additional parsley and a lemon wedge.
