Instructions

  1. Rinse the shrimp under cold water and pat them dry with a paper towel.
  2. In a medium bowl, season the shrimp with salt, pepper, smoked paprika, and red pepper flakes. Toss gently to coat.
  3. Set the seasoned shrimp aside to allow the flavors to meld.
  4. Mince the garlic cloves finely.
  5. Zest the lemon and then juice it, removing any seeds.
  6. Chop the fresh parsley and halve the cherry tomatoes.
  7. Heat a large skillet over medium-high heat and add the olive oil.
  8. Sauté the minced garlic in the skillet for about 30 seconds, stirring constantly.
  9. Add the seasoned shrimp to the skillet in a single layer, avoiding overcrowding.
  10. Cook the shrimp for 2-3 minutes on one side until pink and opaque, then flip them over.
  11. Add the halved cherry tomatoes and white wine (if using) to the skillet.
  12. Squeeze the lemon juice over the shrimp and tomatoes, and sprinkle in the lemon zest. Stir gently.
  13. Cook for another 2-3 minutes until the shrimp are fully cooked and the tomatoes are tender.
  14. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  15. Remove the skillet from heat and stir in the chopped parsley.
  16. Prepare rice or pasta according to package instructions.
  17. Serve the sautéed shrimp over rice or pasta, spooning the pan sauce over the top.
  18. Garnish with additional parsley and a lemon wedge.
