  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Jam of your choice (strawberry, raspberry, etc.)
  • Clotted cream or whipped cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well blended.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk, egg, and vanilla extract until well combined.
  5. Pour the wet ingredients into the dry mixture and gently mix until the dough just comes together. Avoid overmixing.
  6. Lightly flour your work surface and turn the dough out onto it. Knead gently a few times until it holds together.
  7. Pat the dough into a circle about 1-inch thick. Cut into 8 wedges or use a round biscuit cutter.
  8. Place the scones on a parchment-lined baking sheet, leaving space between each. Brush tops with milk or egg wash if desired.
  9. Bake for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  10. Let the scones cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  11. Gather your jam and cream. Allow clotted cream to reach room temperature if using.
  12. Once cool, slice the scones in half horizontally.
  13. Spread jam on the bottom half and top with clotted cream or whipped cream.
  14. Place the top half back on and serve immediately. Store leftovers in an airtight container and reheat to enjoy later.
