- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika

- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper (optional, for heat)
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the russet potatoes thoroughly under cold running water. Peel the potatoes using a vegetable peeler, or leave the skin on if preferred.
- Cut each potato into crinkle-cut fries or thick strips, about ½ inch wide, ensuring uniform size for even cooking.
- Place the cut fries in a large bowl of cold water and soak for at least 30 minutes (up to overnight) to remove excess starch.
- Drain the fries and pat them dry with a kitchen towel or paper towels to remove moisture.
- In a small bowl, combine garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using).
- In a large mixing bowl, drizzle olive oil over the dried fries and toss to coat. Sprinkle the seasoning mixture over the fries and toss again until evenly coated.
- Preheat your oven to 425°F (220°C).
- Line a large baking sheet with parchment paper or a silicone baking mat.
- Spread the seasoned fries in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
- Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through for even browning.
- After 25 minutes, check for doneness. The fries should be golden brown and crispy. If needed, bake for an additional 5-10 minutes.
- Remove the fries from the oven and let them cool for a couple of minutes. Transfer to a serving platter and sprinkle with chopped parsley.
- Serve the fries with your favorite dipping sauces like ketchup, ranch dressing, or spicy aioli.
- If there are leftovers, let them cool completely before storing in an airtight container in the fridge. Reheat in the oven at 375°F (190°C) for 10-15 minutes.
