- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce (adjust to taste)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
- Cooked white rice (for serving)
Instructions
- In a large skillet or Dutch oven, heat the olive oil over medium heat.
- Add the diced onion, green bell pepper, and celery. Sauté for about 5-7 minutes until soft and the onion is translucent.
- Stir in the minced garlic and cook for an additional minute, being careful not to burn it.
- Add the can of diced tomatoes (with juices) to the skillet.
- Pour in the chicken broth to create a rich sauce.
- Stir in the tomato paste until well combined.
- Add Worcestershire sauce, hot sauce, dried thyme, dried oregano, and bay leaf. Stir and let simmer for about 10 minutes.
- Taste the sauce and adjust seasoning with salt and pepper as needed.
- Gently fold in the shrimp, ensuring they are evenly distributed.
- Cook the shrimp in the sauce for about 5-7 minutes, or until they turn pink and opaque.
- Take out the bay leaf before serving.
- Cook white rice according to package instructions.
- Spoon the shrimp mixture over a bed of rice.
- Finish with sliced green onions and freshly chopped parsley.
