  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce (adjust to taste)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion, green bell pepper, and celery. Sauté for about 5-7 minutes until soft and the onion is translucent.
  3. Stir in the minced garlic and cook for an additional minute, being careful not to burn it.
  4. Add the can of diced tomatoes (with juices) to the skillet.
  5. Pour in the chicken broth to create a rich sauce.
  6. Stir in the tomato paste until well combined.
  7. Add Worcestershire sauce, hot sauce, dried thyme, dried oregano, and bay leaf. Stir and let simmer for about 10 minutes.
  8. Taste the sauce and adjust seasoning with salt and pepper as needed.
  9. Gently fold in the shrimp, ensuring they are evenly distributed.
  10. Cook the shrimp in the sauce for about 5-7 minutes, or until they turn pink and opaque.
  11. Take out the bay leaf before serving.
  12. Cook white rice according to package instructions.
  13. Spoon the shrimp mixture over a bed of rice.
  14. Finish with sliced green onions and freshly chopped parsley.
