- 1/2 cup cold water (or more as needed)
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup bell pepper, finely diced (red or green)
- 1 large egg
- Vegetable oil for frying
- Sweet chili sauce or your favorite dipping sauce for serving
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels. Chop the shrimp into small pieces (about 1/2-inch chunks) or pulse in a food processor for a coarser texture. Set aside.
- In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper (if using). Whisk until well combined.
- In a separate bowl, beat the egg lightly and mix in the cold water. Gradually pour this mixture into the dry ingredients, stirring gently until just combined. The batter should be thick but pourable; adjust with more cold water if necessary.
- Fold in the chopped shrimp, green onions, cilantro, and bell pepper until evenly coated.
- Heat vegetable oil in a large skillet or heavy-bottomed pot over medium-high heat until it reaches 350°F (175°C). Test the oil by dropping a small spoonful of batter; it should sizzle and rise.
- Drop spoonfuls of the shrimp batter into the hot oil, frying in batches of 4-5 fritters at a time. Fry for 3-4 minutes on one side until golden brown, then flip and fry for another 2-3 minutes.
- Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Repeat with the remaining batter.
- Serve the fritters warm, garnished with additional cilantro or green onions, alongside sweet chili sauce or your favorite dipping sauce.
