  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
  2. Add the linguine or spaghetti and cook according to package instructions until al dente (usually 8-10 minutes). Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander. Set aside without rinsing.
  4. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  5. Once the butter has melted, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned.
  6. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove shrimp from skillet and set aside.
  7. In the same skillet, pour in the dry white wine and scrape up any brown bits from the bottom. Let simmer for 2-3 minutes until reduced slightly.
  8. Squeeze in the lemon juice and add the remaining 2 tablespoons of butter. Stir until melted and combined. Optionally, add a splash of heavy cream for a creamier sauce.
  9. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  10. Add the drained pasta to the skillet with the sauce and toss gently to coat. If the sauce is too thick, add reserved pasta water to loosen.
  11. Return the cooked shrimp to the skillet, add chopped parsley, and toss until well combined and heated through (about 1-2 minutes).
  12. For extra heat, sprinkle in more red pepper flakes if desired.
  13. Plate the shrimp scampi in shallow bowls, garnishing with additional parsley and grated Parmesan cheese if desired.
  14. Serve immediately while hot, with crusty bread on the side to soak up the sauce.
