Enjoy a quick and delicious Shrimp Scampi with succulent shrimp sautéed in a garlic butter sauce, tossed with linguine, and finished with fresh parsley and lemon. Ideal for a weeknight meal or special occasion!

- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup dry white wine (like Sauvignon Blanc)
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
- Add the linguine or spaghetti and cook according to package instructions until al dente (usually 8-10 minutes). Stir occasionally to prevent sticking.
- Reserve about 1 cup of pasta water, then drain the pasta in a colander. Set aside without rinsing.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
- Once the butter has melted, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned.
- Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove shrimp from skillet and set aside.
- In the same skillet, pour in the dry white wine and scrape up any brown bits from the bottom. Let simmer for 2-3 minutes until reduced slightly.
- Squeeze in the lemon juice and add the remaining 2 tablespoons of butter. Stir until melted and combined. Optionally, add a splash of heavy cream for a creamier sauce.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
- Add the drained pasta to the skillet with the sauce and toss gently to coat. If the sauce is too thick, add reserved pasta water to loosen.
- Return the cooked shrimp to the skillet, add chopped parsley, and toss until well combined and heated through (about 1-2 minutes).
- For extra heat, sprinkle in more red pepper flakes if desired.
- Plate the shrimp scampi in shallow bowls, garnishing with additional parsley and grated Parmesan cheese if desired.
- Serve immediately while hot, with crusty bread on the side to soak up the sauce.
