  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 jalapeño, sliced (optional)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent.
  2. Add the minced garlic to the skillet and cook for an additional 30 seconds, stirring frequently to prevent burning.
  3. Add the ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.
  4. Sprinkle the taco seasoning over the beef, pour in the cup of water, and stir well. Let it simmer for about 5 minutes to meld the flavors and thicken the sauce.
  5. Preheat your oven to 350°F (175°C).
  6. On a large baking sheet or oven-safe skillet, spread out the tortilla chips in an even layer.
  7. Spoon the seasoned beef mixture evenly over the tortilla chips.
  8. Sprinkle the black beans and corn over the beef, followed by a generous layer of shredded cheddar cheese.
  9. Place the baking sheet or skillet in the preheated oven. Bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
  10. Carefully remove the nachos from the oven.
  11. While the nachos are still hot, sprinkle the diced tomatoes over the top.
  12. Add sliced jalapeños if desired.
