- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade seasoning)
- 1 cup water
- 1 bag tortilla chips (about 10–12 ounces)
- 2 cups shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 jalapeño, sliced (optional)
- 1 cup diced tomatoes (fresh or canned)
- 1 avocado, diced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent.
- Add the minced garlic to the skillet and cook for an additional 30 seconds, stirring frequently to prevent burning.
- Add the ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary.
- Sprinkle the taco seasoning over the beef, pour in the cup of water, and stir well. Let it simmer for about 5 minutes to meld the flavors and thicken the sauce.
- Preheat your oven to 350°F (175°C).
- On a large baking sheet or oven-safe skillet, spread out the tortilla chips in an even layer.
- Spoon the seasoned beef mixture evenly over the tortilla chips.
- Sprinkle the black beans and corn over the beef, followed by a generous layer of shredded cheddar cheese.
- Place the baking sheet or skillet in the preheated oven. Bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
- Carefully remove the nachos from the oven.
- While the nachos are still hot, sprinkle the diced tomatoes over the top.
- Add sliced jalapeños if desired.
- Top with diced avocado.
- Drizzle sour cream over the nachos.
- Sprinkle chopped cilantro over the top.
- Serve with lime wedges on the side for an extra zing.
