  • 4 bone-in pork chops (about 1 inch thick)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup sliced mushrooms (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the pork chops dry with paper towels.
  2. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning blend all over the pork chops.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add sliced onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  5. Transfer the sautéed onions and garlic to the slow cooker.
  6. In a separate bowl, combine chicken broth, Worcestershire sauce, soy sauce, brown sugar, thyme, and rosemary. Whisk until well combined and pour over the onions and garlic in the slow cooker.
  7. If using, add sliced mushrooms to the slow cooker.
  8. Place the seared pork chops on top of the mixture in the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  9. Check the pork chops halfway through cooking and spoon some sauce over them if desired.
  10. Once cooking time is up, check the internal temperature of the pork chops (should be at least 145°F/63°C). Carefully remove from the slow cooker.
  11. Stir the sauce in the slow cooker. For a thicker sauce, transfer to a saucepan and simmer until reduced.
  12. Drizzle sauce over pork chops and garnish with fresh parsley before serving.

Notes

  • For best results, allow the pork chops to marinate in the seasoning for at least 30 minutes before cooking.
  • You can also add vegetables like carrots or potatoes to the slow cooker for a complete meal.
