- 4 bone-in pork chops (about 1 inch thick)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 cup sliced mushrooms (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the pork chops dry with paper towels.
- In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning blend all over the pork chops.
- In a large skillet, heat olive oil over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add sliced onion and sauté for 2-3 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
- Transfer the sautéed onions and garlic to the slow cooker.
- In a separate bowl, combine chicken broth, Worcestershire sauce, soy sauce, brown sugar, thyme, and rosemary. Whisk until well combined and pour over the onions and garlic in the slow cooker.
- If using, add sliced mushrooms to the slow cooker.
- Place the seared pork chops on top of the mixture in the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Check the pork chops halfway through cooking and spoon some sauce over them if desired.
- Once cooking time is up, check the internal temperature of the pork chops (should be at least 145°F/63°C). Carefully remove from the slow cooker.
- Stir the sauce in the slow cooker. For a thicker sauce, transfer to a saucepan and simmer until reduced.
- Drizzle sauce over pork chops and garnish with fresh parsley before serving.
Notes
- For best results, allow the pork chops to marinate in the seasoning for at least 30 minutes before cooking.
- You can also add vegetables like carrots or potatoes to the slow cooker for a complete meal.
