- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 1/4 cups all-purpose flour
- 3/4 cup finely chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, confectioners’ sugar, and vanilla until light and fluffy.
- Gradually blend in the flour, salt, and nuts.
- Roll dough into 1 inch balls.
- Place cookies on ungreased cookie sheets.
- Bake for 10 to 12 minutes, or until golden brown.
- Let cool.
- Roll cookies in confectioners’ sugar.
Notes
- Store in an airtight container at room temperature for up to 1 week.
- For a nutty variation, add 1/2 cup of finely chopped pecans or walnuts to the dough.
- Dust generously with powdered sugar after baking and again once cooled for a sweeter finish.
