  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)
  • Vegetable oil for frying

Instructions

  1. Chop the salmon fillet into small pieces on a clean cutting board. Aim for a chunky texture; avoid over-processing. Transfer to a large mixing bowl.
  2. Add the finely chopped onion and bell pepper to the bowl. Crack in the eggs, then add mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, and pepper. If using, add chopped parsley. Gently fold in the breadcrumbs until well combined, being careful not to overmix.
  3. Form the mixture into patties about 1/2 inch thick using your hands. Place them on a plate or baking sheet lined with parchment paper. Refrigerate for about 30 minutes to firm up (optional).
  4. In a large skillet, heat enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep) over medium heat. Once hot, carefully place the patties in the skillet, avoiding overcrowding. Fry for 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes on the other side. Transfer to a plate lined with paper towels to drain excess oil.
  5. Serve the salmon patties on their own or in a sandwich. For a sandwich, use a soft bun or toasted English muffin, adding extra mayonnaise or tartar sauce, fresh tomato slices, and crisp lettuce. Pair with coleslaw or a green salad, and a squeeze of fresh lemon juice for added zest.
