  • Author: Maria
  • Total Time: 30 minutes
  • Yield: 2-4 servings 1x

Description

This Spam Kimchi Fried Rice is a flavorful and satisfying dish featuring crispy Spam, tangy kimchi, and perfectly cooked rice, all enhanced with gochujang and sesame oil. Topped with a fried egg, it’s a comforting meal perfect for any time of day.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 can of Spam (12 oz), diced
  • 1 cup kimchi, chopped
  • 1 tablespoon vegetable oil
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 eggs (optional, for topping)
  • Sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the Rice: If you haven’t already, cook your rice according to package instructions. For the best results, use day-old rice as it has a firmer texture that holds up better during frying. If you’re using freshly cooked rice, spread it out on a baking sheet to cool and dry out a bit.
  2. Prepare the Spam: Open the can of Spam and carefully remove it. Dice it into small cubes, about 1/2 inch in size. This will help it crisp up nicely when cooked.
  3. Chop the Kimchi: Take your kimchi and chop it into smaller pieces if it’s in large chunks. This will help distribute the flavor throughout the rice.
  4. Mise en Place: Gather all your ingredients and have them ready to go. This makes the cooking process smoother and more enjoyable.
  5. Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. You want it hot enough to fry the Spam but not so hot that it burns.
  6. Cook the Spam: Add the diced Spam to the hot pan. Let it cook for about 5-7 minutes, stirring occasionally, until it’s golden brown and crispy on the edges.
  7. Add Garlic and Green Onions: Once the Spam is crispy, add the minced garlic and the white parts of the green onions to the pan. Stir-fry for about 1-2 minutes until fragrant.
  8. Incorporate the Kimchi: Add the chopped kimchi to the pan. Stir everything together and let it cook for another 3-4 minutes.
  9. Add the Rice: Now it’s time to add the cooked rice. Break up any clumps with your hands or a spatula before adding it to the pan. Stir everything together, ensuring the rice is well mixed with the Spam and kimchi.
  10. Season the Rice: Pour in the gochujang and soy sauce. Mix thoroughly to ensure the rice is evenly coated. Taste and adjust seasoning with salt and pepper as needed.
  11. Finish with Sesame Oil: Drizzle the sesame oil over the rice and give it one last good stir.
  12. Fry the Eggs (Optional): If you’re adding eggs, heat a small non-stick skillet over medium heat. Add a little oil and crack the eggs into the pan. Fry them sunny-side up or to your desired doneness.
  13. Plate the Fried Rice: Spoon the Spam kimchi fried rice onto plates or into bowls.
  14. Add the Eggs: If you’ve prepared eggs, place one on top of each serving of fried rice.
  15. Garnish: Sprinkle the green parts of the chopped green onions and sesame seeds over the top.
  16. Serve and Enjoy: Serve your Spam kimchi fried rice hot, and enjoy the delightful combination of flavors and textures.
