Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and fresh lemon juice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Grease a 9×5-inch loaf pan with butter or non-stick cooking spray, and optionally line the bottom with parchment paper.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
