Enjoy these soft and chewy Strawberry Cheesecake Cookies, bursting with sweet strawberries and creamy cheesecake flavor. Perfect for any occasion, they offer a delightful treat that combines the best of both worlds in every bite!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Add softened cream cheese and mix on low speed until smooth, scraping down the sides of the bowl as needed.
  7. Gently fold in diced strawberries and white chocolate chips (if using) with a spatula.
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  9. Line a baking sheet with parchment paper.
  10. Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet, leaving space between each cookie.
  11. Bake for 12-15 minutes, or until edges are lightly golden. The centers may look slightly underbaked.
  12. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. Once cooled, dust lightly with powdered sugar.
  14. Enjoy fresh or store in an airtight container at room temperature for up to a week.

Notes

  • Use Fresh Strawberries: Fresh strawberries yield the best flavor and texture.
  • Adjusting Sweetness: Reduce granulated sugar or omit white chocolate chips for a less sweet cookie.
  • Experiment with Flavors: Add lemon zest or almond extract for a unique twist.
