- 1 cup cream cheese, softened
- 1 cup fresh strawberries, diced

Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy (2-3 minutes).
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
- Add softened cream cheese and mix on low speed until smooth, scraping down the sides of the bowl as needed.
- Gently fold in diced strawberries and white chocolate chips (if using) with a spatula.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until edges are lightly golden. The centers may look slightly underbaked.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust lightly with powdered sugar.
