  • 8 slices of thick-cut bread (brioche or challah)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 4 large eggs
  • 1 cup milk
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1 tbsp butter (for cooking)
  • Maple syrup (for serving)
  • Whipped cream (optional, for serving)

Instructions

  1. In a medium mixing bowl, add the softened cream cheese.
  2. Sprinkle in the powdered sugar.
  3. Pour in the vanilla extract.
  4. Using a hand mixer or a whisk, beat the mixture until smooth and creamy.
  5. Gently fold in the sliced strawberries.
  6. In a large mixing bowl, crack the four eggs.
  7. Add the milk to the eggs.
  8. Sprinkle in the ground cinnamon and nutmeg (if using).
  9. Whisk everything together until well combined.
  10. Take a slice of thick-cut bread and spread a generous amount of the cream cheese filling on one side.
  11. Top the cream cheese side with another slice of bread to create a sandwich. Press down gently.
  12. Repeat with the remaining slices of bread and filling until all sandwiches are made.
  13. Heat a large skillet or griddle over medium heat and add a tablespoon of butter.
  14. Dip one assembled sandwich into the egg mixture, coating both sides well.
  15. Place the coated sandwich onto the hot skillet and cook for about 3-4 minutes on one side until golden brown.
  16. Flip the sandwich and cook for another 3-4 minutes on the other side.
  17. Remove the cooked French toast from the skillet and keep warm in a low oven (around 200°F) while cooking the remaining sandwiches.
  18. Stack two slices of the cooked French toast on a plate.
  19. Drizzle with maple syrup and top with whipped cream if desired.
