  • 1 cup fresh strawberries, finely chopped
  • 1 cup chocolate kisses, unwrapped
  • Extra powdered sugar for dusting (optional)

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Add in the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Gently fold in the finely chopped strawberries.
  6. Cover the bowl with plastic wrap or transfer the dough to an airtight container.
  7. Refrigerate the dough for at least 1 hour, or overnight for enhanced flavor.
  8. Preheat your oven to 350°F (175°C).
  9. Line two baking sheets with parchment paper.
  10. Using a cookie scoop or tablespoon, scoop out portions of the chilled dough and roll them into balls, about 1 inch in diameter.
  11. Place the dough balls on the prepared baking sheets, leaving about 2 inches of space between each cookie.
  12. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
