- 1 teaspoon ground cinnamon

Instructions
- In a medium saucepan, combine the water, unsalted butter, and 1 tablespoon of granulated sugar. Place the saucepan over medium heat and stir until the butter is completely melted and the mixture comes to a gentle boil.
- Once boiling, remove the saucepan from the heat. Add the all-purpose flour, salt, baking powder, and vanilla extract all at once. Stir vigorously with a wooden spoon or spatula until the mixture forms a ball and pulls away from the sides of the pan (about 1-2 minutes).
- Allow the dough to cool for about 5-10 minutes.
- Transfer the dough to a mixing bowl. Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the dough on medium speed for about 1-2 minutes.
- Prepare a clean surface or a large cutting board. Lightly flour the surface to prevent sticking.
- Divide the dough into small portions (about the size of a tablespoon) and roll each portion into a small ball or shape them into small logs.
- Set the shaped dough aside on a plate or baking sheet.
- In a small bowl, combine the 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon. Mix well.
- Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
- Spray the air fryer basket with cooking spray.
- Place the churro bites in the air fryer basket, leaving space between each piece.
- Air fry for about 8-10 minutes, or until golden brown and puffed up, shaking the basket halfway through.
- Carefully remove the churro bites from the air fryer and place them in a bowl.
- While warm, roll the churro bites in the cinnamon sugar mixture until well-coated.
- Sprinkle any leftover cinnamon sugar over the churro bites for extra sweetness.
- Serve warm, optionally with a dipping sauce like chocolate or caramel.
