Ingredients
Scale
- 1 cup sweet corn kernels (fresh or frozen)
- 1 cup haloumi cheese, grated
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 1/4 cup milk (or a non-dairy alternative)
- Oil for frying (vegetable or olive oil)
- Lemon wedges, for serving
- Yogurt or sour cream, for serving (optional)
Instructions
- Gather all your ingredients on the counter for a smoother process.
- If using frozen sweet corn, thaw it by placing it in warm water or letting it sit at room temperature.
- In a large mixing bowl, combine sweet corn kernels and grated haloumi cheese.
- In a separate bowl, whisk together flour, baking powder, salt, black pepper, and smoked paprika (if using).
- In another bowl, beat the eggs and add the milk, mixing well.
- Pour the egg and milk mixture into the bowl with corn and haloumi, stirring gently to combine.
- Gradually fold in the dry ingredients, being careful not to overmix. A few lumps are fine. Finally, fold in the chopped parsley.
- Heat a large non-stick skillet over medium heat and add enough oil to coat the bottom.
- Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, leaving space between each.
- Cook for 3-4 minutes on one side until golden brown, pressing down gently with a spatula.
- Flip the fritters and cook for another 3-4 minutes until golden brown and cooked through.
- Transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
- Repeat with remaining batter, adding more oil as needed. You should yield about 12-15 fritters.
- Arrange the cooked fritters on a serving platter or individual plates.
- Serve warm with lemon wedges on the side for brightness.
- Optionally, add a dollop of yogurt or sour cream on top and sprinkle with extra parsley.
- These fritters are great as a snack, appetizer, or light meal, pairing well with a fresh salad or sautéed greens.
Notes
- For extra flavor, consider adding finely chopped onions or garlic to the fritter mixture.
- For a bit of heat, add chopped jalapeños or a pinch of cayenne pepper to the batter.
- Avoid overcrowding the pan while frying to ensure even cooking.
