Enjoy these crispy Sweet Corn and Haloumi Fritters, featuring a golden exterior and savory cheesy interior, perfect for snacking, appetizers, or a light meal. Serve them warm with lemon wedges and optional yogurt or sour cream for a delightful treat!

Ingredients

Scale
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 cup haloumi cheese, grated
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup milk (or a non-dairy alternative)
  • Oil for frying (vegetable or olive oil)
  • Lemon wedges, for serving
  • Yogurt or sour cream, for serving (optional)

Instructions

  1. Gather all your ingredients on the counter for a smoother process.
  2. If using frozen sweet corn, thaw it by placing it in warm water or letting it sit at room temperature.
  3. In a large mixing bowl, combine sweet corn kernels and grated haloumi cheese.
  4. In a separate bowl, whisk together flour, baking powder, salt, black pepper, and smoked paprika (if using).
  5. In another bowl, beat the eggs and add the milk, mixing well.
  6. Pour the egg and milk mixture into the bowl with corn and haloumi, stirring gently to combine.
  7. Gradually fold in the dry ingredients, being careful not to overmix. A few lumps are fine. Finally, fold in the chopped parsley.
  8. Heat a large non-stick skillet over medium heat and add enough oil to coat the bottom.
  9. Once the oil is hot, drop spoonfuls of the fritter mixture into the skillet, leaving space between each.
  10. Cook for 3-4 minutes on one side until golden brown, pressing down gently with a spatula.
  11. Flip the fritters and cook for another 3-4 minutes until golden brown and cooked through.
  12. Transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
  13. Repeat with remaining batter, adding more oil as needed. You should yield about 12-15 fritters.
  14. Arrange the cooked fritters on a serving platter or individual plates.
  15. Serve warm with lemon wedges on the side for brightness.
  16. Optionally, add a dollop of yogurt or sour cream on top and sprinkle with extra parsley.
  17. These fritters are great as a snack, appetizer, or light meal, pairing well with a fresh salad or sautéed greens.

Notes

  • For extra flavor, consider adding finely chopped onions or garlic to the fritter mixture.
  • For a bit of heat, add chopped jalapeños or a pinch of cayenne pepper to the batter.
  • Avoid overcrowding the pan while frying to ensure even cooking.
