Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1/4 cup strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- 1/4 cup powdered sugar, for dusting
- Chocolate shavings or cocoa powder, for garnish (optional)
Instructions
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
- Add the egg and vanilla extract to the butter-sugar mixture and mix until smooth and creamy.
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
- In a separate bowl, combine the mascarpone cheese, cooled brewed coffee, and coffee liqueur (if using) until smooth and creamy.
- Take about 1 tablespoon of the cookie dough, flatten it slightly, and place about 1 teaspoon of the mascarpone mixture in the center. Fold the edges over the filling, pinch to seal, and roll into a ball. Place on a baking sheet lined with parchment paper. Repeat for remaining dough and filling.
- Preheat your oven to 350°F (175°C).
- Bake the filled cookie dough balls for about 12-15 minutes, until edges are set but centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Dust cooled cookies with powdered sugar using a fine mesh sieve.
- Optionally, garnish with chocolate shavings or cocoa powder.
- Enjoy immediately or store in an airtight container at room temperature for up to a week, or freeze for up to a month.
Notes
- Ensure the butter is softened for easy creaming with sugar.
- Do not overmix the dough to keep cookies tender.
- Adjust baking time based on your oven for perfect texture.
- For a stronger coffee flavor, increase the amount of coffee liqueur.
