  • 1/2 cup mascarpone cheese
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 1/4 cup powdered sugar, for dusting
  • Chocolate shavings or cocoa powder, for garnish (optional)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until smooth and creamy.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
  5. In a separate bowl, combine the mascarpone cheese, cooled brewed coffee, and coffee liqueur (if using) until smooth and creamy.
  6. Take about 1 tablespoon of the cookie dough, flatten it slightly, and place about 1 teaspoon of the mascarpone mixture in the center. Fold the edges over the filling, pinch to seal, and roll into a ball. Place on a baking sheet lined with parchment paper. Repeat for remaining dough and filling.
  7. Preheat your oven to 350°F (175°C).
  8. Bake the filled cookie dough balls for about 12-15 minutes, until edges are set but centers are still soft.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Dust cooled cookies with powdered sugar using a fine mesh sieve.
  11. Optionally, garnish with chocolate shavings or cocoa powder.
  12. Enjoy immediately or store in an airtight container at room temperature for up to a week, or freeze for up to a month.
