1 pound ground turkey
1 large sweet potato, peeled and cubed
1 onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 (15 ounce) can diced tomatoes, undrained
1 packet taco seasoning
1 cup shredded cheddar cheese
- 1 pound ground turkey

Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine sweet potatoes, turkey, onion, and garlic.
- Stir in chicken broth, salt, and pepper.
- Pour mixture into a 9×13 inch baking dish.
- Bake for 30-40 minutes, or until sweet potatoes are tender.
