Description

Enjoy these vegan apple cider donuts that capture the essence of fall with their warm flavors and fluffy texture. Perfect for breakfast or a sweet snack, they are easy to make and can be customized with spices, nuts, or a sweet glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup apple cider
  • 1 cup brown sugar, packed
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the wet ingredients: apple cider, brown sugar, vegetable oil, applesauce, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Using a piping bag or zip-top bag, fill each donut cavity about 2/3 full with batter.
  6. Tap the pan gently on the counter to remove air bubbles.
  7. Bake for 10-12 minutes, or until golden brown and a toothpick comes out clean.
  8. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the coating, mix granulated sugar and cinnamon in a small bowl.
  10. Once cooled, dip each donut in the cinnamon-sugar mixture.
  11. Serve fresh or store in an airtight container for up to 2 days, or freeze for up to a month.

Notes

  • For a spicier flavor, consider adding a pinch of ground ginger or allspice to the dry ingredients.
  • If you prefer a glaze, mix powdered sugar with a little apple cider to create a sweet topping instead of the cinnamon-sugar coating.
  • Feel free to add chopped nuts or raisins to the batter for added texture and flavor.
