  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Whisk until well combined.
  3. In another bowl, mix the wet ingredients: coconut sugar, maple syrup, applesauce, vegetable oil, and vanilla extract. Whisk until smooth and creamy.
  4. Gradually pour the wet mixture into the dry ingredients, folding gently with a spatula until just combined. Avoid overmixing.
  5. Fold in the grated carrots, and if desired, the raisins and chopped nuts until evenly distributed.
  6. Line a baking sheet with parchment paper.
  7. Using a cookie scoop or two tablespoons, scoop portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  8. Optionally, press down on each cookie with the back of a fork or your fingers to flatten slightly.
  9. Bake in the preheated oven for 12-15 minutes, checking for doneness around the 12-minute mark. Cookies should be lightly golden around the edges and soft in the center.
  10. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  11. Store completely cooled cookies in an airtight container at room temperature for up to a week.
