- 1 cup granulated sugar
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1/3 cup vegetable oil
- 1 tbsp apple cider vinegar
- 2 tsp pure vanilla extract
- 1 cup crushed vegan Oreo cookies (plus extra for decoration)
- 1 cup vegan butter, softened
- 4 cups powdered sugar
- 1/4 cup unsweetened almond milk (or any plant-based milk)
- 2 tsp pure vanilla extract
- 1 cup crushed vegan Oreo cookies (for mixing into the frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt. Whisk until well mixed.
- In a separate bowl, mix the almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Whisk until combined.
- Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon. Avoid overmixing; a few lumps are fine.
- Add the crushed vegan Oreo cookies and gently fold them into the batter until evenly distributed.
- Grease and flour two 8-inch round cake pans, or line the bottoms with parchment paper.
- Divide the batter evenly between the two prepared cake pans and smooth the tops if needed.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- In a large mixing bowl, beat the softened vegan butter with an electric mixer until creamy and smooth.
- Gradually add the powdered sugar, mixing on low speed until combined.
- Add the almond milk and vanilla extract, then beat on medium speed until the frosting is light and fluffy. Adjust consistency with more almond milk if needed.
- Fold in the crushed vegan Oreo cookies.
- Once the cakes are completely cool, place one layer on a serving plate or cake stand.
- Spread a generous amount of the Oreo frosting on top of the first layer.
- Carefully place the second cake layer on top of the frosted layer and gently press down.

- For added decoration, sprinkle extra crushed vegan Oreo cookies on top of the frosted cake.
