  • 1/3 cup vegetable oil
  • 1 tbsp apple cider vinegar
  • 2 tsp pure vanilla extract
  • 1 cup crushed vegan Oreo cookies (plus extra for decoration)
  • 1 cup vegan butter, softened
  • 4 cups powdered sugar
  • 1/4 cup unsweetened almond milk (or any plant-based milk)
  • 2 tsp pure vanilla extract
  • 1 cup crushed vegan Oreo cookies (for mixing into the frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt. Whisk until well mixed.
  3. In a separate bowl, mix the almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Whisk until combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon. Avoid overmixing; a few lumps are fine.
  5. Add the crushed vegan Oreo cookies and gently fold them into the batter until evenly distributed.
  6. Grease and flour two 8-inch round cake pans, or line the bottoms with parchment paper.
  7. Divide the batter evenly between the two prepared cake pans and smooth the tops if needed.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.
  10. In a large mixing bowl, beat the softened vegan butter with an electric mixer until creamy and smooth.
  11. Gradually add the powdered sugar, mixing on low speed until combined.
  12. Add the almond milk and vanilla extract, then beat on medium speed until the frosting is light and fluffy. Adjust consistency with more almond milk if needed.
  13. Fold in the crushed vegan Oreo cookies.
  14. Once the cakes are completely cool, place one layer on a serving plate or cake stand.
  15. Spread a generous amount of the Oreo frosting on top of the first layer.
  16. Carefully place the second cake layer on top of the frosted layer and gently press down.

  • For added decoration, sprinkle extra crushed vegan Oreo cookies on top of the frosted cake.
