Ingredients

  • 4 cups of seedless watermelon, cubed
  • 1 cup of freshly squeezed lemon juice (about 46 lemons)
  • 1/4 cup of erythritol or your preferred sugar substitute
  • 2 cups of cold water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)
  • Extra lemon slices for garnish (optional)

Instructions

  1. Cut the watermelon in half and scoop out the flesh using a large spoon, removing any seeds.
  2. Cut the watermelon flesh into 1-inch cubes and place them into a blender.
  3. Blend the watermelon cubes on high speed until smooth (about 30 seconds to 1 minute).
  4. Optionally, strain the juice through a fine mesh sieve or cheesecloth for a smoother texture. You should have about 3 cups of fresh watermelon juice.
  5. In a large pitcher, combine the freshly squeezed lemon juice and erythritol. Stir until the erythritol is fully dissolved.
  6. Add the cold water to the pitcher and stir to combine.
  7. Pour in the fresh watermelon juice and stir well to mix all the flavors.
  8. Taste the lemonade and adjust sweetness or tartness as desired by adding more erythritol or lemon juice.
  9. Cover the pitcher and refrigerate for at least 1-2 hours to allow flavors to meld.
  10. Fill tall glasses with ice cubes and pour the chilled watermelon lemonade over the ice.
  11. Garnish with lemon slices and fresh mint leaves if desired.
  12. Serve immediately and enjoy!
