- 4 cups of seedless watermelon, cubed and frozen
- 1 cup of fresh watermelon juice
- 2 tablespoons of lime juice
- 2 tablespoons of honey or agave syrup
- 1 cup of ice cubes (optional)
- Fresh mint leaves for garnish (optional)
- Extra lime wedges for garnish (optional)
Instructions
- Select a ripe, seedless watermelon. Look for one that feels heavy for its size and has a uniform shape. The skin should be smooth and free of blemishes.
- Cut the watermelon in half and scoop out the flesh using a large spoon, removing any seeds.
- Cut the watermelon flesh into 1-inch cubes and spread them in a single layer on a baking sheet lined with parchment paper.
- Freeze the watermelon cubes for at least 4 hours or overnight until completely frozen.
- Cut the remaining half of the watermelon into smaller chunks.
- Blend the watermelon chunks on high until smooth, about 30 seconds to 1 minute. Strain through a fine mesh sieve if a smoother juice is desired.
- Measure out 1 cup of fresh watermelon juice and set aside. Store any leftover juice in the refrigerator for up to 2 days.
- In a high-speed blender, combine the frozen watermelon cubes, 1 cup of fresh watermelon juice, 2 tablespoons of lime juice, and 2 tablespoons of honey or agave syrup.
- For a thicker slushie, add 1 cup of ice cubes (optional).
- Blend on high until smooth and slushy, about 30 seconds to 1 minute. Stop to scrape down the sides as needed.
- Taste and adjust sweetness if necessary, adding more honey or agave syrup if desired.
- Pour the slushie into glasses, filling them about three-quarters full.
- Garnish with fresh mint leaves and a lime wedge on the rim.
- Serve immediately with a straw or spoon and enjoy!
