  • 2 cups plain yogurt (Greek or regular)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • Fresh fruits (like berries or mango) for topping
  • Mint leaves for garnish (optional)

Instructions

  1. Measure out 2 teaspoons of gelatin powder and place it in a small bowl.
  2. Add 3 tablespoons of cold water to the gelatin. Stir gently to combine and let it sit for about 5-10 minutes to bloom.
  3. In a medium saucepan, combine 1 cup of heavy cream and 1/2 cup of granulated sugar.
  4. Place the saucepan over medium heat and stir until the sugar has completely dissolved (do not boil).
  5. Remove the saucepan from heat.
  6. Add the bloomed gelatin mixture to the warm cream and sugar mixture, stirring until fully dissolved.
  7. Whisk in 2 cups of plain yogurt and 1 tablespoon of vanilla extract until smooth and well combined.
  8. Pour the mixture into molds (ramekins, cups, or a larger mold) filling them about 3/4 full.
  9. Cover the molds with plastic wrap or aluminum foil.
  10. Refrigerate for at least 4 hours, or overnight, until set.
  11. While the panna cotta chills, prepare your toppings. Wash fresh fruits or make a fruit compote by cooking down fruits with sugar and lemon juice.
  12. Optionally, wash a few mint leaves for garnish.
  13. Once set, serve directly in the molds or unmold onto a plate.
  14. To unmold, run a knife around the edge, place a plate on top, and flip over gently.
  15. Top with fresh fruits or fruit compote and garnish with mint leaves.
  16. Serve chilled and enjoy the creamy texture paired with fresh toppings. Perfect for any occasion!

Notes

  • For a dairy-free version, substitute yogurt and cream with coconut yogurt and coconut cream.
