Ingredients
Scale
- 2 cups plain yogurt (Greek or regular)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- Fresh fruits (like berries or mango) for topping
- Mint leaves for garnish (optional)
Instructions
- Measure out 2 teaspoons of gelatin powder and place it in a small bowl.
- Add 3 tablespoons of cold water to the gelatin. Stir gently to combine and let it sit for about 5-10 minutes to bloom.
- In a medium saucepan, combine 1 cup of heavy cream and 1/2 cup of granulated sugar.
- Place the saucepan over medium heat and stir until the sugar has completely dissolved (do not boil).
- Remove the saucepan from heat.
- Add the bloomed gelatin mixture to the warm cream and sugar mixture, stirring until fully dissolved.
- Whisk in 2 cups of plain yogurt and 1 tablespoon of vanilla extract until smooth and well combined.
- Pour the mixture into molds (ramekins, cups, or a larger mold) filling them about 3/4 full.
- Cover the molds with plastic wrap or aluminum foil.
- Refrigerate for at least 4 hours, or overnight, until set.
- While the panna cotta chills, prepare your toppings. Wash fresh fruits or make a fruit compote by cooking down fruits with sugar and lemon juice.
- Optionally, wash a few mint leaves for garnish.
- Once set, serve directly in the molds or unmold onto a plate.
- To unmold, run a knife around the edge, place a plate on top, and flip over gently.
- Top with fresh fruits or fruit compote and garnish with mint leaves.
- Serve chilled and enjoy the creamy texture paired with fresh toppings. Perfect for any occasion!
