- 2 medium zucchinis, grated
- 1 teaspoon salt

- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder

Instructions
- Wash the zucchinis thoroughly under cold water.
- Grate the zucchinis using a box grater or food processor.
- Place the grated zucchini in a clean kitchen towel or cheesecloth, gather the edges, and twist to squeeze out as much moisture as possible.
- In a large mixing bowl, combine the grated zucchini with 1 teaspoon of salt and let it sit for about 10 minutes to draw out more moisture. Discard the liquid that accumulates.
- Add 1/2 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, and 1/4 cup of chopped fresh parsley.
- Crack in 2 large eggs and add 1/2 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1/4 teaspoon of baking powder.
- Mix until well combined; the mixture should be thick enough to hold its shape.
- Heat a large skillet over medium heat and add enough oil to coat the bottom.
- Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening each slightly.
- Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes on the other side.
- Transfer to a plate lined with paper towels to absorb excess oil.
- Serve the fritters warm, optionally with a dollop of sour cream or Greek yogurt.
- For extra flavor, sprinkle with fresh herbs or a squeeze of lemon juice.
- Let any leftovers cool completely before storing in an airtight container in the refrigerator for up to 3 days.
