  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Wash the zucchinis thoroughly under cold water.
  2. Grate the zucchinis using a box grater or food processor.
  3. Place the grated zucchini in a clean kitchen towel or cheesecloth, gather the edges, and twist to squeeze out as much moisture as possible.
  4. In a large mixing bowl, combine the grated zucchini with 1 teaspoon of salt and let it sit for about 10 minutes to draw out more moisture. Discard the liquid that accumulates.
  5. Add 1/2 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, and 1/4 cup of chopped fresh parsley.
  6. Crack in 2 large eggs and add 1/2 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1/4 teaspoon of baking powder.
  7. Mix until well combined; the mixture should be thick enough to hold its shape.
  8. Heat a large skillet over medium heat and add enough oil to coat the bottom.
  9. Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening each slightly.
  10. Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes on the other side.
  11. Transfer to a plate lined with paper towels to absorb excess oil.
  12. Serve the fritters warm, optionally with a dollop of sour cream or Greek yogurt.
  13. For extra flavor, sprinkle with fresh herbs or a squeeze of lemon juice.
  14. Let any leftovers cool completely before storing in an airtight container in the refrigerator for up to 3 days.
